磁弛豫时间在食品安全检测中的应用研究进展

摘要:
食品安全是全社会高度关注的话题,低场核磁共振(LF-NMR)技术因无需前增菌,具有灵敏度高、操作简便、设备与试剂国产化率高等特点,在食品安全检测中引起了广泛关注.弛豫时间的变化是LF-NMR的关键性检测指标.从横向弛豫时间T2、纵向弛豫时间T1的形成原理和特点出发,综述了基于T2转换原理的生物传感器在食品掺假、食品保鲜、化学污染物、微生物等领域的检测应用,以及T1在提高定量分析的灵敏度方面的作用.

Application of magnetic relaxation time in food safety testing

Abstract:
Food safety is a highly concerned topic for the entire society.Low-field nuclear magnetic resonance (LF-NMR) technology has attracted widespread attention in food safety testing because of no requirement of pre-acceleration,high sensitivity,easy operation,and high localization rates of equipment and reagents.The change of magnetic relaxation time is a key test indicator in LF-NMR techniques.Based on the mechanism and characteristics of horizontal relaxation time T2 and longitudinal relaxation time T1,we reviewed the application of biosensors based on horizontal magnetic relaxation time conversion mechanism,including in the fields of food adulteration identification,moisture detection, chemical contaminant detection and microbiological detection The application of using T1 in increasing the sensitivity of quantitative analysis was reviewed as well.
